Thanksgiving Leftovers Casserole Recipe

Let’s be honest, having a fridge filled with Thanksgiving leftovers can be really overwhelming. Make good use of the extra goods to cook up a yummy dinner!

  • 1 box of Stuffing Mix for Turkey
  • 4 cups chopped leftover roasted turkey (dark or light meat)
  • 2 cups frozen mixed vegetables (carrots, corn, green beans, peas), thawed
  • 1 can of cream of chicken soup
  • 3 cups leftover mashed potatoes
  • 1 cup Shredded Cheddar Cheese
  • ⅛ teaspoon paprika


  1. Heat oven to 375 degrees F.
  2. Prepare stuffing as directed on package; spread onto bottom of 13×9-inch baking dish sprayed with cooking spray.
  3. Combine turkey, mixed vegetables, and cream of chicken soup; spoon over stuffing.
  4. Mix potatoes and cheese; spread over turkey mixture. Sprinkle with paprika.
  5. Bake 30 to 40 min. or until heated through.
